Help with a haircut that I have to do Monday

I am doing a haircut on Monday.  She has SUPER thick hair, with a medium to coarse texture.  She likes it cut to a little above her shoulders, and very choppy, piecey, and messy.  I've tried razoring it to remove weight, I've point cut, and we thin it out every time.  It never seems to look quite right to me though.  And, I usually always have trouble layering her hair.  Can someone please help me out?  Any advice about how to hold my fingers when layering it, what tools to use/how to use them, etc. would be great!  It never seems piecey enough.  How do I get that choppy, piecey look?  Thanks a bunch!

personally, on a texture such as this, i would flat iron her hair and then cut it.
