undercutting

what do you do when you do a bob type haircut that is supposed to bevel under...but it doesn't? i have a couple of clients whose hair just will not do what i want. i figured out that on one of them i can just notch into the under sections and it'll cooperate but every so often it still just goes crazy and flips out.
i, honestly, have no idea why they keep coming to me because usually they are complaining about the flips when they leave. one of them has been coming to me for 3 years and I think maybe twice it's been the way she wanted. i just dont understand whats going on.

it always seems like one side does exactly what you want and the other of course never does
